Chef John Fraser launched a prix fixe experience at Azure, the rooftop restaurant perched atop The Tampa EDITION. This family-style Mediterranean menu pulls from Fraser's Greek roots and represents Azure's first prix fixe concept.

Dinner kicks off with Pikilia. This starter course brings dips and small bites to share. Entrées range from Chicken Breast Avgolemono dressed with lemon and mint to Lamb Chops accompanied by green tahini.

Brunch serves Strapatsada, a Greek frittata loaded with tomato and feta. At lunch, diners can order a Sesame Fried Chicken Koulouri Sandwich alongside other selections.

Fraser earned a Michelin star for Lilac, his restaurant one floor below in the same hotel. The Tampa EDITION holds the distinction as the city's only five-star hotel.

Amy Racine runs the beverage program at Azure. She's spent two decades working in the field. Last week, she received recognition as a 2026 James Beard Award semifinalist for Outstanding Professional in Beverage Service.

Cocktails span from a Spicy Mango Margarita to a zero-proof Caipirinha. The rooftop terrace offers sweeping views across Water Street.
